Strips

Butchers generally cut pork strips from the tenderloin, leg, loin or chop cuts.

Pork strips are delicious in soups, stir-fries or pad Thai.
If you buy a larger piece of meat, such as a loin, you can cut it several ways, including into strips that are 1 cm (½ in.) thick.

Availability

Pork strips are easy to find in grocery stores. You can also buy a tenderloin, leg or loin and cut your own pork strips.

Cooking method	Instructions
On the stove	Heat some oil in a large skillet set over medium-high heat. Cook the pork strips, stirring very little, for about 5 minutes. Avoid overcooking this lean, delicate meat to prevent it from drying out.
On the BBQ	Preheat BBQ to high. Thread strips onto skewers. Grill directly over heat source for 1–2 minutes on each side, brushing with marinade. Remove skewers from grill and cover with foil. Let sit for 3 minutes before serving. This resting period allows the meat to settle and the juices to be distributed throughout.
