Pork Stroganoff

Note : you can also use pork cubes.

Preparation

On the stove

  1. In a large skillet set over high heat, heat oil and 15 mL (1 tbsp.) of butter. Brown half the meat at a time, without cooking completely. Season with salt and pepper. Set aside on a plate.
  2. In the same skillet set over medium-high heat, melt remaining butter. Sauté onion, garlic and mushrooms until golden. Season with salt and pepper. Sprinkle with flour and continue cooking for 1 minute, stirring constantly. Deglaze with wine and add broth. Bring to a boil while stirring and simmer gently for approximately 5 minutes or until sauce thickens.
  3. Remove from heat and add sour cream. Return to heat and warm without bringing to a boil. Adjust seasoning and sprinkle with parsley. Serve on pappardelle with a green salad or green vegetable.
