Preparation

On the stove

  1. Using the tip of a knife, lightly score meat in a diamond pattern on both sides and place in a resealable bag with marinade.
  2. Remove air from bag and knead meat to thoroughly coat in marinade. Marinate in the refrigerator for 4–8 hours.
  3. Remove flank steak from bag, soaking up any excess marinade with a paper towel.
  4. Let stand at room temperature for 5–10 minutes.
  5. In a large skillet set over medium-low heat, cook meat in 2 tbsp. olive oil for 2–4 minutes on each side.
  6. Be careful not to overcook to keep meat tender—can be easily cooked in a BBQ on high heat.
  7. Remove from heat, cover with foil and let stand 5 minutes before serving.
  8. Serve with cucumber and crunchy vegetable salad and udon or soba noodles.

Sesame ginger crunchy vegetable salad

  1. Add all vegetables to a bowl except cucumbers.
  2. Slice cucumbers just before serving to keep them crisp.
  3. For some extra spice, add chili hot sauce.
  4. Place all dressing ingredients in a blender. Pulse until smooth.
  5. Add dressing to taste and remaining sesame seeds, then toss.
  6. Any leftover dressing can be stored in the refrigerator for up to two weeks.
