Kidney

Kidneys are considered offal. They are taken from the animal’s abdomen.

Kidneys have a sharp, pungent taste and firm texture.
Remove the thin film, cut them in half and remove the fat and veins.
Chopped kidney is great in many meat preparations, including meatloaves, meat pies and burgers.

You can buy kidneys from many ethnic markets or order them from some butcher shops and specialty grocery stores.

Cooking method	Instructions
On the stove	Bring broth to a boil in a pot. Add kidneys and continue cooking over medium heat for about 2 hours 30 minutes or until cooked and tender.
