Ear

Pork ears contain little meat and are served whole, candied or sliced into salads. They’re also used to make terrines.

Did you know?

  • The ear is not a well-known cut in Quebec, but it is used in many dishes around the world. For example, the traditional version of feijoada completa, Brazil’s national dish, features black beans and includes the pig’s ears, snout and tail.
  • Our traditional head cheese recipe also features ears.
  • Pig’s ears can add flavour and texture to sauces.

 

Availability

  • You can get pigs’ ears from ethnic markets or order them from some butcher shops and specialty grocery stores.
