Bacon & Black Plum Marmalade
On the stove
- Sauté the bacon in a large pot over medium-high heat for approximately 15 minutes, stirring frequently.
- Add the shallot and continue cooking for 1 minute. Add the plums and brown sugar; continue cooking over high heat for 5 minutes.
- Deglaze with the vinegar and add the maple syrup. Simmer for 5–10 minutes or until the marmalade is nice and thick. Season with pepper.
- Pour into Mason jars. The marmalade will keep in the refrigerator for a few weeks.
