Old-Fashioned Chive Cretons

On the stove

  1. Render lard in a large pot, then sauté onion and shallot for 3 minutes. Add ground pork, mix well and cook for 3–4 minutes over medium heat.
  2. Add nutmeg, cloves, coriander and chopped garlic. Stir well and cook for another 3 minutes. Cover and cook over low heat for 45 minutes. Drain off rendered lard and set aside.
  3. Remove from heat and beat cretons with a fork. Add ⅓ reserved lard to cretons, pour in gin and let remaining lard rest for 30 minutes. Mix in remaining lard and chives. Season with salt and pepper. Place in a terrine mould and refrigerate.
