Old-Style Mustard Glazed Ham

  1. Place oven rack in middle position. Preheat oven to 180 °C (350 °F).
  2. In a bowl, whisk together jam, mustards, rosemary and garam masala.
  3. Place ham, water, orange juice, onion quarters, peppercorns and mustard seeds in an oven-safe casserole dish. Brush ham with a little jam mixture. Bring to a boil over high heat.
  4. Transfer to oven and cook uncovered for 1 hour, basting ham with a little more jam mixture three times. Let ham stand 10 minutes on a cutting board.
  5. Meanwhile, strain cooking liquid through a fine sieve and wipe casserole dish clean. Keep onion for serving, if desired. Return cooking liquid to casserole and add remaining jam mixture. Reduce sauce over medium heat until syrupy, about 10–15 minutes. Season with salt and pepper.
  6. Carve ham and serve slices drizzled with sauce.
