Pork Croque-Madame

In The Oven

  1. Preheat oven to 200 °C (400 °F).
  2. In a small saucepan set over medium heat, melt 45 ml (3 tbsp.) of butter. Add flour and cook for 1 minute while stirring. Pour in milk and bring to a boil, stirring constantly. Add 125 ml (½ cup) of cheese and continue cooking until melted. Season with salt and pepper. Cover and let cool.
  3. Arrange 4 slices of bread on a parchment-lined baking sheet. Add approximately 125 ml (½ cup) of pork roast on each slice. Cover with 30 ml (2 tbsp.) of béchamel sauce. Close with remaining slices and cover with remaining béchamel. Top with remaining cheese.
  4. Bake for 10 to 15 minutes or until cheese is lightly browned. Finish on broil if necessary.
  5. Meanwhile, in a non-stick skillet set over medium-low heat, melt remaining butter and gently cook eggs, half-covered, until egg whites coagulate.
  6. Place eggs on the croque madames. Season with salt and pepper. If desired, garnish with fresh herbs (parsley, chives, thyme). Serve with green vegetables.
