Decadent ham and bacon waffles

In The Oven

  1. Preheat the oven to 180 °C (350 °F).
  2. Arrange waffles on a parchment-lined baking sheet. Top with cheese slices. Divide ham and bacon over half of waffles. Bake for 5 minutes, or until cheese is melted and meat is hot.
  3. Meanwhile, in a large non-stick skillet over medium heat, melt 15 mL (1 tbsp.) of butter. Gently crack eggs into skillet and cook on one side only for 2–3 minutes or until white is cooked. Season with salt and pepper.
  4. Divide eggs between 4 ham- and bacon-topped waffles. Top with arugula and close sandwiches.
  5. In the same skillet, melt remaining butter. Transfer to a bowl and whisk together with maple syrup and cayenne pepper.
  6. Serve sandwiches on plates. Drizzle with butter and maple syrup mixture.
