Pork cretons

On the stove

  1. Melt butter in a large skillet or pot over medium-high heat and sauté onion for approximately 2 minutes. Add meat and sauté for 5 minutes. Season with salt and pepper.
  2. Add broth, parsley and spices. Cover and simmer for about 1 hour, stirring frequently.
  3. Add breadcrumbs and use an electric mixer to blend until smooth. Season to taste.
  4. Pour mixture into a mould and pack firmly. Cover and refrigerate for approximately 4 hours before serving. Serve with vegetable soup and a loaf of crusty whole wheat bread.
