Rack of pork with ice cider

Preparation
In The Oven
- Place oven rack in middle position and preheat oven to 200 °C (400 °F).
- In a bowl, combine ice cider, garlic, shallots, parsley, bay leaves, pink peppercorn and salt.
- Coat rack of pork with mixture.
- In a saucepan, bring remaining prepared mixture to a boil and reduce until sauce has a syrupy texture. Season with salt and pepper.
- In the meantime, in an oven-safe skillet, sear all sides of the pork rack in oil while regularly brushing meat with the sauce.
- Bake for 50 minutes or until desired doneness. Regularly brush meat with sauce for a glazed finish.
- For medium rare, remove from oven when a thermometer inserted in the meat reads 61 °C (142 °F). Keep thermometer inserted in meat and cover with foil. Let stand until the thermometer reads 63 °C (145 °F), about 15 minutes.
- Slice meat between the ribs to serve.

Cooking variations
- For medium doneness, remove from oven when a thermometer inserted in the meat reads 65 °C (149 °F). Keep thermometer inserted in meat and cover with foil. Let stand until the thermometer reads 67 °C (153 °F), about 15 minutes.
- For well-done meat, remove from oven when a thermometer inserted in the meat reads 70 °C (158 °F). Keep thermometer inserted in meat and cover with foil. Let stand until the thermometer reads 72 °C (162 °F), about 15 minutes.
