Dijon pork chops

On the BBQ

  1. In a dish, whisk together mustard, oil, maple syrup, vinegar, herbs, peppers and garlic. Generously season with salt and pepper. Add chops and coat well with mixture. Cover and let marinate for 1 hour in the refrigerator.
  2. Preheat barbecue to medium-high. Oil the grill.
  3. Remove chops from marinade. Transfer marinade to a small saucepan. Add cream and bring to a boil. Simmer over medium heat for 5 minutes, whisking frequently. Season to taste. Keep sauce warm.
  4. Meanwhile, grill pork chops for about 4 minutes on each side or until a thermometer inserted in the centre of a chop reads 140°F (60°C) for medium rare. Set aside on a plate and let stand for 5 minutes.
  5. Grill asparagus 5 minutes, turning, or until tender. Grill bread slices and lemon halves for 2–3 minutes or until grilled. Season with salt and pepper.
  6. Drizzle chops with sauce and serve with asparagus, bread and lemons. The sauce also makes a great dipping sauce for fries.
