Pork Cutlets with Mustard Sauce

On the stove

  1. In a large, hot non-stick skillet set over medium-high heat, melt butter and sear cutlets for 2 minutes on each side. Season with salt and pepper. Set aside on a plate.
  2. In the same skillet, sauté shallots until soft. Add broth, cream and Dijon mustard. Reduce until sauce thickens, stirring constantly. Season to taste.
  3. Return cutlets to sauce and simmer over low heat for 2–3 minutes. Add parsley. Serve cutlets over mashed potatoes and drizzle with sauce.
