Zero-waste cheese fondue

Preparation

On the stove

  1. In a bowl, combine cheeses and cornstarch.
  2. In a fondue pot over medium heat, bring wine to a boil with garlic and nutmeg. Generously season with pepper. Gradually add cheese and stir until melted. Stir in lemon juice. If fondue seems too thick, add wine as needed.
  3. Place pot in centre of table with meats and sides.

Note

  1. If you don’t have a fondue set, use a large cast-iron skillet and bring to a boil on the stov-etop.
