Baked Beans with Molasses & Pork Skin Chunks

In The Oven

  1. Rinse beans and remove any impurities. In a bowl, cover beans with water and soak for 12 hours.
  2. Preheat oven to 140 °C (285 °F).
  3. In an oven-safe pot, combine water, maple syrup, molasses, mustard, thyme and bay leaf. Lightly season and add lard, onion and soaked beans. Bake covered for at least 5 hours. Add water during cooking if necessary since beans must always be covered with liquid.
