Spicy Pork Bowl with Marinated Cucumber

  1. In a bowl, combine all ingredients and add hot sauce to taste. Refrigerate for 30 minutes.

Spicy pork bowl

  1. In a bowl, combine broth, soy sauce, mirin, rice vinegar and cornstarch. Set aside.
  2. In a large skillet set over high heat, heat 15 ml (1 tbsp.) of vegetable oil and soften the onion. Season with salt. Transfer to a plate.
  3. In another large skillet set over high heat, heat remaining oil and sesame oil. Lightly brown ground pork, breaking it up with a wooden spoon. Add garlic and cook for 1 minute more. Add broth and reserved onions. Bring to a boil and let simmer for 3 to 4 minutes or until meat is cooked. Add sambal oelek to taste and season with pepper.
  4. Serve meat over rice in large bowls, topped with marinated cucumber.
  5. Serve with green onions, sesame seeds, sambal oelek and lime wedges.
