Pork Steaks with Hazelnuts & Dates Sauce

On the stove

  1. In a small pan over medium heat, melt the butter and sauté the shallot and hazelnuts for 5 minutes, stirring occasionally.
  2. Add the veal demi-glace, dates and orange zest, and simmer over low heat for 20 minutes. Season generously and set aside.
  3. In another pan over high heat, melt the butter and cook the pork steaks for 3 minutes on each side. Season generously. Cover with foil and let stand for 15 minutes.
  4. To serve, drizzle the pork steaks with the hazelnut and date sauce.
