Pork Steaks with Hazelnuts & Dates Sauce
On the stove
- In a small pan over medium heat, melt the butter and sauté the shallot and hazelnuts for 5 minutes, stirring occasionally.
- Add the veal demi-glace, dates and orange zest, and simmer over low heat for 20 minutes. Season generously and set aside.
- In another pan over high heat, melt the butter and cook the pork steaks for 3 minutes on each side. Season generously. Cover with foil and let stand for 15 minutes.
- To serve, drizzle the pork steaks with the hazelnut and date sauce.
