Christmas Pork Leg Roast

In The Oven

  1. In a heated skillet, brown each side of the roast for 3 minutes in a drizzle of oil. Remove roast. Add red wine and reduce by half.
  2. Place oven rack in middle position and preheat oven to 180 °C (350 °F).
  3. In a roasting pan, combine spices, vegetables and broth. Arrange roast in centre of pan and cover with foil.
  4. Bake for about 1 hour and 30 minutes.
  5. Once cooked, wrap roast in foil to keep warm.
  6. Recover cooking juices and pour into a saucepan. Remove sprigs of thyme and rosemary, bring to a boil and reduce by half.
  7. In a bowl, dissolve cornstarch in a bit of cooking juice; then add to saucepan. Continue cooking for 1 to 2 minutes, until sauce thickens. Adjust seasoning.
  8. Carve roast into thin slices and drizzle with gravy. Serve with mashed potatoes and some green vegetables.
