Maple-Glazed Rack of Pork

  1. Place oven rack in middle position and preheat oven to 400°F (200°C).
  2. In a small saucepan, combine maple syrup and confit. Bring to a boil and reduce by half.
  3. In a large oven-safe skillet set over medium-high heat, heat oil and butter and brown rack on all sides. Season with salt and pepper.
  4. Brush rack with syrup (repeat a few times during cooking).
  5. Add wine and broth to skillet. Bake for 15 minutes. Reduce oven temperature to 350°F (180°C) and continue cooking for 55 minutes or until a thermometer reads 140°F (60°C) for pink doneness.
  6. Remove rack and cover with foil. Let stand for 15 minutes.
  7. Slice between ribs to serve. Drizzle with cooking juice and side with seasonal vegetables.
