Pork Chops & Ratatouille

On the stove

  1. Heat oil in a large non-stick skillet over medium heat. Sauté pork for 3 to 4 minutes on each side. Remove from skillet, cover, and set aside.
  2. In the same skillet, sauté garlic, eggplant, bell pepper, zucchini, and onion for 7 to 8 minutes. Stir in tomatoes, oregano, and pork and heat for 1 minute. Season to taste. Garnish with black olives if desired.
  3. You may also serve stir-fry as a warm salad over a bed of Romaine lettuce and top with slices of black olives and garlic croutons. Season with Provençal dressing.
