Pork loin sandwiches with italian herbs

In The Oven

  1. Place oven rack in middle position. Preheat oven to 375°F (190°C).
  2. On a work surface, season roast with salt and pepper. Brush roast with pesto on all sides. In a dish, combine breadcrumbs, grated cheese and spices. Season with salt and pepper. Roll roast in breadcrumb mixture to coat. Transfer roast to a roasting pan.
  3. Bake for about 1 hour or until a thermometer inserted in the centre of the meat reads 140°F (60°C). Set roast aside on a plate and let cool. Cover and refrigerate overnight.
  4. On a cutting board, cut roast into thin slices. Spread slices of bread with pesto and Dijonnaise. Garnish with pork slices, cheese, roasted peppers, pickled eggplant, arugula and basil leaves.
