Grilled Apricot Rack of Pork

On the BBQ

  1. Preheat barbecue to medium.
  2. Season rack of pork with salt and pepper and sear on all sides. Place the rack on a sheet of aluminum foil, brush with sauce and continue cooking over low heat for 40 to 60 minutes, until the inside temperature reaches 68 °C (155 °F).
  3. Set any remaining sauce aside to baste during cooking and serve as gravy with the meat.
  4. Remove rack from the barbecue and let stand for 15 minutes before slicing between the ribs.
  5. Serve with gravy.
