Ground pork protein bowl with peanut sauce

On the stove

  1. For the pork, heat oil and sauté green onions, garlic and ginger for 2 minutes in a large skillet set over medium-high heat. Add ground pork and cook for 4–5 minutes or until pork starts to brown, stirring with a wooden spoon. Add soy sauce, fish sauce and brown sugar. Season with pepper. Continue cooking for 2 minutes or until pork is cooked. Season to taste and keep warm.
  2. For the salad, massage black kale and red cabbage with vinegar and oil in a bowl. Add carrots and radishes. Season with salt and pepper. Stir to combine.
  3. For the peanut satay sauce, whisk all ingredients together in a bowl. Season with salt and pepper to taste.
  4. Divide the rice evenly between four bowls. Top with ground pork, black kale salad, broccoli, edamame, peanuts and toasted coconut. Drizzle with peanut satay sauce.
