Ground Pork Taco Bowl

Preparation

On the stove

  1. For the rice, bring broth, rice and butter to a boil in a large saucepan. Season with salt. Cover and reduce heat. Simmer until rice is cooked and liquid is absorbed, about 25 minutes. Add beans and mix. Cover, remove from heat and let stand for 5 minutes. Add cilantro and lime zest just before serving. Season to taste.
  2. Meanwhile, in a large skillet set over medium-high heat, heat oil and cook ground pork and spices for about 5–6 minutes or until pork is golden brown, stirring with a wooden spoon. Season with salt and pepper. Transfer to a bowl and keep warm.
  3. In the same skillet, brown corn kernels over medium-high heat. Add oil as needed. Season with salt and pepper. Keep warm.
  4. In a small bowl, whisk sour cream with lime juice and chili powder, to taste. Season with salt and pepper.
  5. Divide black bean rice equally into four bowls. Garnish with ground pork, grilled corn, cherry tomatoes, cheese, avocado slices, sour cream, jalapeño, shallot, and cilantro leaves. Sprinkle with crushed corn chips.
