BBQ Québec Pork Loin

On the BBQ

  1. Fill a meat injector with Rosemont Spiced Rum and inject all over the pork loin for consistent flavour.
  2. Rub pork loin with Jamaican Jerk seasoning, making sure to cover the entire surface.
  3. Preheat the oven to 275 °C (135 °F).
  4. Cook loin until a thermometer inserted in the centre of the meat reads between 55 °C and 62 °C (130 °F to 145 °F), about 45 minutes.
  5. About 5 minutes before cooking is complete, brush the loin with Champion sauce.
  6. Slice loin into equally-sized pieces.
  7. Add Jamaican Jerk seasoning to taste.
  8. Sear loin slices on the barbecue for about 1 minute on each side.
