Preparation

In The Oven

  1. Preheat oven to 375°F (190°C), rack in the center.
  2. In a bowl, mix 2 tbsp. (30 mL) butter, 2 tbsp. (30 ml), chopped herbs, 2 tbsp. (30 mL) maple liqueur, salt and pepper to taste.
  3. Season the pork rack with salt and pepper, then coat with the herb butter mixture. Place in a roasting pan and roast in the oven for about 30 minutes.
  4. Meantime, in a skillet, brown the apples and shallots in 2 tbsp. (30 mL) of butter.
  5. Add the maple syrup and cook until it sticks to the apples.
  6. Arrange the apples, shallots, and herb sprigs around the pork rack and add the broth.
  7. Continue cooking in the oven for 45 minutes, or until desired doneness. Add more broth if needed.
  8. For medium-rare meat, when a meat thermometer inserted into the pork reaches 140°F (60°C), remove from oven, leaving the thermometer in the meat.
  9. Place the rack, apples, and shallots on a serving dish. Cover with foil and let rest until the thermometer reads 145°F (63°C), about 15 minutes. Reserve 1 cup (250 ml) of cooking juices.
  10. Meanwhile, in a bowl, mix the flour and 10 ml (2 tsp) butter to make a beurre manié.
  11. In a small saucepan, bring the reserved cooking juices and maple liqueur to a boil. Whisk in the beurre manié and let thicken over low heat. Season with salt and pepper.
  12. Slice the rack into chops and serve with apples, shallots, and sauce.
