Prosciutto & Pepper Pork Chops

On the BBQ

  1. Season chops with pepper and dried oregano. Wrap each chop in a slice of prosciutto.
  2. Set one section of the barbecue grill on high and the other on low. Lightly oil chops on each side.
  3. Grill chops on high for 2 minutes each side and then transfer to low heat section. Continue cooking for about 6 minutes or until a thermometer inserted in the centre of a chop reads 61°C (142°F) for pink doneness. Set aside on a plate. Cover with foil and let stand for 3 minutes before serving.
