Pulled Ham Sandwich with Amarula Onion Compote

Amarula onion compote


In The Oven

  1. Place oven rack in the middle position and preheat oven to 135 °C (275 °F).
  2. Place ham, onions, carrots, celery, garlic, lemon, thyme, vinegar, broth, pepper and salt in a roasting pan, cover and bake for 5 hours.
  3. Let cool, then shred meat.
  4. Meanwhile, for the onion compote, in a hot skillet set over low heat, brown onions in olive oil for 2 to 3 minutes. Add garlic, thyme and lemon juice.
  5. Deglaze with white wine and reduce until almost all the liquid has evaporated.
  6. Add Amarula and reduce over low heat to obtain a creamy onion compote. Season to taste.
  7. Fill sandwich buns with pulled ham, onion compote and arugula.
