Bacon Brussels Sprouts

  1. Finely chop 5 slices of bacon and brown them in a heated, ungreased skillet. Add butter, then arrange and brown Brussels sprouts for 2 minutes on each side.
  2. Deglaze with beer and maple syrup. Add garlic and reduce for 8 minutes. Turn off heat, add lemon juice, check seasoning and let cool in the skillet.
  3. In another skillet, brown remaining slices of bacon, then transfer to a paper towel to absorb excess grease.
  4. Place oven rack in middle position and preheat oven to 200 °C (400 °F).
  5. Once cooled, cut slices of bacon in half and make small bites by wrapping each Brussels sprout half in a half slice of bacon.
  6. Arrange bites on an parchment-lined baking sheet or a silicone mat.
  7. Bake for 5 minutes to finish browning the bacon. Serve on toothpicks.
