Pork & Spinach Stir-Fry

On the stove

  1. Heat oil in a wok or large non-stick skillet over medium-high heat and brown pork medallions for 1 to 2 minutes on each side. Transfer to a plate and cover with foil.
  2. In the same skillet, sauté bell peppers and mushrooms for 3 to 4 minutes over medium-high heat. Add oil as needed.
  3. Stir in tamari sauce, lime juice, marmalade, and ginger. Let simmer for about 1 minute, stirring constantly. Return pork to skillet and add spinach and bean sprouts. Heat while stirring to combine and serve immediately.
