Apricot-Stuffed Pork Rolls

On the stove
- Combine apricots, bread crumbs, basil and port wine in a bowl. Season with salt and pepper. Set aside.
- On a work surface, slightly flatten cutlets between two sheets of plastic film using a meat tenderer or rolling pin. Evenly spread apricot mixture over cutlets. Tightly roll cutlets and wrap individually in plastic wrap. Refrigerate at least 1 hour.
- Heat oil in a large non-stick skillet over medium heat and brown rolls on each side. Cover and continue cooking for 3 to 4 minutes, turning often. Season with salt and pepper. Slice into 2.5 cm (1 in.) sections and serve.
