Italian-Style Rice Casserole with Pork

On the stove

  1. In a large deep skillet set over high heat, heat oil and half the butter. Brown chops for 1 minute on each side. Season with salt and pepper. Transfer to a plate.
  2. In the same skillet set over medium-high heat, add remaining butter. Lightly brown sausage and onion. Add bell pepper, garlic and cayenne pepper. Continue cooking for 1 minute, stirring frequently.
  3. Add rice, broth, tomatoes, bay leaf and thyme. Season with salt and pepper. Return chops to pot and bring to a boil. Stir rice lightly, cover and let simmer gently for about 25 minutes or until rice is cooked. Remove skillet from heat and let stand for 5 minutes. Adjust seasoning and sprinkle with parsley. Serve in the centre of the table.
