Pork Parmigiana

  1. Place oven rack in middle position and Preheat oven to 200 °C (400 °F).
  2. Place flour in a bowl. Place eggs in a second bowl, and combine cheese, breadcrumbs and dried herbs in a third bowl. Set aside.
  3. Coat each cutlet with flour and shake to remove any excess. Dip in egg and then in Parmesan mixture. Pat mixture into cutlets.
  4. In a large, non-stick skillet set over high heat, heat one-third of the oil and butter. Brown 2 to 3 cutlets at a time for 1 to 2 minutes on each side. Set aside in a large baking dish or on a parchment-lined baking sheet. Continue with remaining cutlets and fats.
  5. Pour half the sauce over cutlets, but do not cover completely.
  6. Top with cheese and bake for 10 to 15 minutes. Finish cooking on broil, as required. Serve with pasta coated in remaining sauce and a green vegetable of your choice (brocolini, broccoli, beans, etc.).
