Tuscan Pork

Note : You can replace the chops with tenderloin, steaks or boneless butt slices.


In The Oven

  1. Place oven rack in middle position and preheat oven to 200 °C (400 °F).
  2. In a large non-stick skillet set over high heat, heat oil and brown pork chops on each side. Set aside on a plate.
  3. In the same skillet set over medium heat, soften onion and garlic for about 2 minutes. Add tomatoes, olives and deglaze with wine. Season with salt and pepper. Return chops to skillet and mix to combine.
  4. Bake for approximately 10 minutes. Serve with roasted potatoes and a handful of black cabbage or rapini.
