Pork Tenderloin with Zucchini, Tomatoes & Basil

  1. Sear the pork tenderloin on all sides in 30 ml (2 tbsp.) of olive oil. Add the butter, thyme, garlic and bay leaf and cook until the ingredients caramelize. Brush the tenderloin and continue cooking until it reaches a temperature of 60 °C (140 °F). Let stand for at least 10 minutes before serving.
  2. Put the zucchini in a bowl. Season with salt, lemon juice and 15 ml (1 tbsp.) of olive oil. Combine with the cherry tomatoes and basil.
  3. Slice the tenderloin into approximately 6-mm (¼-in.) pieces. Spread the pork slices evenly over a serving dish and garnish with the zucchini, tomato and basil mixture.
