The Loranger Family’s Mustard Pork Tenderloin Recipe

  1. Place oven rack in middle position and preheat oven to 200 °C (400 °F).
  2. In a heated skillet greased with your choice of fat, sear the pork tenderloins. Season and set aside.
  3. On a work surface over 2 pieces of food-safe plastic film, spread bacon slices in two groups of 4. Arrange each tenderloin over each group of bacon. Wrap tenderloins with the bacon.
  4. In the same skillet, sear tenderloins until bacon is slightly cooked but not browned.
  5. Arrange the 2 tenderloins on an oven-safe baking sheet lined with a silicone mat or parchment paper and bake for 15 minutes.
  6. Meanwhile, add onion to skillet and brown for 2 minutes. Add garlic, mustard, mustard seeds and deglaze with cognac. Add cream and simmer for 5 minutes. Check seasoning.
  7. Slice pork tenderloins. Drizzle slices with mustard sauce and then sprinkle with maple sugar nuggets. Serve with mashed potatoes.
