Christmas-Style Pork Osso Buco

Preparation

In The Oven

  1. Place oven rack in middle position and preheat oven to 170 °C (325 °F).
  2. In a large skillet set over medium-high heat, heat oil. Brown hocks on each side. Season with salt and pepper. Set aside in an oven-safe dish.
  3. In the same skillet, soften onion and garlic for about 2 minutes. Add tomato paste and continue cooking over medium heat, stirring constantly for about 2 minutes. Deglaze with ale and reduce to a quarter. Pour over reserved meat. Add remaining ingredients, except turnips and beets.
  4. Cover with foil and seal tightly. Bake for about 3 hours. Add vegetables and cover again. Continue cooking for approximately 1 hour or until meat and vegetables are tender. Season to taste.

Side (Ruby cocktail)

  1. In a shaker, add a few ice cubes, vodka, cranberry juice, maple syrup and lime juice.
  2. Shake for a few seconds, pour into stemmed glasses and add the orange San Pellegrino. Enjoy!
