Fresh Salad Topped with Pork Flank Steak

On the BBQ

  1. Combine olive oil, lime juice and zest, honey, sherry vinegar, mustard and shallot.
  2. Pour ⅓ cup of this mixture over flank steaks and marinate for at least 30 minutes.
  3. Divide remaining ingredients onto plates and refrigerate.
  4. Preheat barbecue to high.
  5. Remove meat from marinade and cook until medium rare, approximately 3–4 minutes on each side, depending on thickness of steaks.
  6. Season during cooking.
  7. Remove pork from grill and let rest for 2 minutes before slicing.
  8. Serve over fresh salad with dressing.
