Pork Sausage with Spanish-Style Corn Salsa

In The Oven

  1. In a large skillet set over medium heat, heat oil and sauté onion until softened and slightly browned. Add paprika, garlic and thyme. Continue cooking for 1 minute, stirring frequently. Add tomatoes and sausages. Simmer for about 10 minutes. Season with salt and pepper. Keep warm.
  2. Meanwhile, combine all salsa ingredients in a bowl. Season with salt and pepper. Set aside.
  3. In the meantime, place oven rack in middle position and preheat oven to 200 °C (400 °F). Spread baguette slices on a baking sheet. Drizzle with olive oil and season with salt. Bake for about 5 minutes, or until golden brown.
  4. Place sausage mixture in a hot cast iron skillet and top with salsa. Sprinkle with fresh herbs (cilantro, parsley, thyme, etc.) and serve with croutons.
