Honey mustard pork salad

On the stove

  1. In a large skillet set over medium-high heat, heat 15 mL (1 tbsp.) oil and brown meat for 2–3 minutes on each side or until cooked. Season with salt and pepper.
  2. Add balsamic vinegar, mustard, honey and remaining oil. Stir to coat meat and continue cooking for 1 minute more. Season to taste. Transfer to a plate and let stand for about 5 minutes, then cut into thin slices.
  3. Divide remaining ingredients onto 4 plates. Top with pork and drizzle with warm dressing. Season with pepper and serve immediately.
