Honey mustard pork salad

On the stove
- In a large skillet set over medium-high heat, heat 15 mL (1 tbsp.) oil and brown meat for 2–3 minutes on each side or until cooked. Season with salt and pepper.
- Add balsamic vinegar, mustard, honey and remaining oil. Stir to coat meat and continue cooking for 1 minute more. Season to taste. Transfer to a plate and let stand for about 5 minutes, then cut into thin slices.
- Divide remaining ingredients onto 4 plates. Top with pork and drizzle with warm dressing. Season with pepper and serve immediately.
