Pork, Pesto and Vegetable Pasta

On the stove

  1. Bring a large amount of salted water to a boil and cook pasta according to package directions.
  2. Meanwhile, in a large skillet, heat oil over high heat and brown pork for 3–4 minutes. Season generously. Add vegetables and continue cooking for 4–5 minutes.
  3. Stir in pesto and pasta. Mix well, warm and serve immediately with freshly grated Parmesan.
