Pork, Pesto and Vegetable Pasta
On the stove
- Bring a large amount of salted water to a boil and cook pasta according to package directions.
- Meanwhile, in a large skillet, heat oil over high heat and brown pork for 3–4 minutes. Season generously. Add vegetables and continue cooking for 4–5 minutes.
- Stir in pesto and pasta. Mix well, warm and serve immediately with freshly grated Parmesan.
