Pork Cutlets with Mushroom Sauce

On the stove

  1. Heat half the butter in a large skillet over medium-high heat. Lightly brown half the cutlets for about 1 minute on each side. Season with salt and pepper. Transfer to a plate and cover with foil. Keep warm. Repeat process with remaining cutlets and butter.
  2. In the same skillet, brown mushrooms for 3 to 4 minutes. Add butter as needed. Add shallot and garlic, and continue cooking for 1 minute. Add bacon and brown until crispy. Deglaze with wine and add demi-glace sauce. Simmer gently for approximately 5 minutes. Serve over cutlets.
