This recipe is easy
Pork chops, mashed parsnips, roasted carrots and plum sauce
Ingredients
Mashed parsnip
Balsamic plum sauce
Maple-glazed carrot
Your choice of green vegetable (thin broccolini stems sautéed with garlic, blanched green beans halved lengthwise, blanched green peas, spinach, kale or chard lightly sautéed in butter, small watercress salad drizzled with olive oil, etc.)
Preparation
On the stove
Mashed parsnip
- In a saucepan over medium heat, melt butter until lightly golden. Add the parsnips and sage leaves. Mix well. Add broth and water. Season with salt and pepper. Bring to a boil. Reduce heat and simmer until parsnips are very tender, 12–15 minutes.
- In a blender, puree parsnips until very smooth. Add more liquid as needed. Season to taste. Keep warm.
Balsamic plum sauce
- Meanwhile, in a small saucepan over medium heat, brown onion, ginger and red pepper flakes in butter. Deglaze with vinegar and reduce almost to dry. Add plums, water and maple syrup. Season with salt and pepper. Bring to a boil. Simmer over medium-low heat until plums are mushy, about 5 minutes. Puree sauce until smooth. Keep warm.
Carrot and pork chop
- Meanwhile, in a large skillet, bring carrots, water and butter to a boil. Season with salt and pepper. Cover and reduce heat. Simmer until carrots begin to soften, 10–15 minutes depending on thickness.
- Remove lid and add garlic, maple syrup, ginger, lemon juice and spices. Simmer, stirring occasionally, until carrots are very tender and well-glazed, about 10–15 minutes. Add water as needed. Using a skimmer, remove carrots and keep warm.
- Season pork chops with salt and pepper. In the same skillet with the carrot juice, over medium-high heat, brown pork chops in oil for 3–4 minutes on each side or until a thermometer inserted in centre of a pork chop reads 60°C (140°F) for pink doneness. Let rest for 5 minutes on a plate and keep warm.
- Spread mashed parsnips on plates. Add pork chops and carrots. Drizzle with plum sauce. Garnish with sage leaves. Serve with your choice of green vegetable.
