Pork Steak Hamburger With Herb and Horseradish Gremolata

On the stove

  1. In a large bowl, mix pork and breadcrumbs, 1 tbsp. (15 mL) balsamic vinegar, garlic powder and egg. Season with salt and pepper. Using your hands, shape mixture into 8 thin patties.
  2. Heat oil in a large skillet over medium-high heat. Add 4 patties at a time and cook for 6–8 minutes, flipping halfway through cooking. Transfer to a plate and keep warm. Cook remaining patties.
  3. In the same skillet, melt butter over medium heat. Add onion and thyme. Season with salt and pepper. Cook until onion starts to caramelize, stirring occasionally, about 5 minutes. Add mushrooms and continue cooking for 5 minutes. Sprinkle with flour and continue cooking for 1 minute, stirring constantly.
  4. Deglaze with the broth and remaining balsamic vinegar, scraping the bottom of the pan with a wooden spoon. Stir in the mustard. Bring to a boil. Reduce heat and simmer for 5–7 minutes or until sauce is thick. Season with salt and pepper to taste.
  5. Add patties back into the skillet and cook for 2 minutes or until they’re warmed up and covered with sauce.
  6. Meanwhile, mix all gremolata ingredients in a bowl. Season with salt and pepper to taste.
  7. Serve patties with onion and mushroom sauce. Top with gremolata. Serve with mashed potatoes, rice or short pasta, if desired.
