Pork Steak Hamburger With Herb and Horseradish Gremolata

On the stove
- In a large bowl, mix pork and breadcrumbs, 1 tbsp. (15 mL) balsamic vinegar, garlic powder and egg. Season with salt and pepper. Using your hands, shape mixture into 8 thin patties.
- Heat oil in a large skillet over medium-high heat. Add 4 patties at a time and cook for 6–8 minutes, flipping halfway through cooking. Transfer to a plate and keep warm. Cook remaining patties.
- In the same skillet, melt butter over medium heat. Add onion and thyme. Season with salt and pepper. Cook until onion starts to caramelize, stirring occasionally, about 5 minutes. Add mushrooms and continue cooking for 5 minutes. Sprinkle with flour and continue cooking for 1 minute, stirring constantly.
- Deglaze with the broth and remaining balsamic vinegar, scraping the bottom of the pan with a wooden spoon. Stir in the mustard. Bring to a boil. Reduce heat and simmer for 5–7 minutes or until sauce is thick. Season with salt and pepper to taste.
- Add patties back into the skillet and cook for 2 minutes or until they’re warmed up and covered with sauce.
- Meanwhile, mix all gremolata ingredients in a bowl. Season with salt and pepper to taste.
- Serve patties with onion and mushroom sauce. Top with gremolata. Serve with mashed potatoes, rice or short pasta, if desired.
