Buffalo pork tenderloin

Preparation

On the BBQ

  1. In a dish, coat pork tenderloins with oil and spices. Cover and let meat rest in the fridge for 1 hour.
  2. Preheat barbecue to high. Oil the grill.
  3. For Buffalo sauce, whisk butter, hot sauce, honey and spices together in a bowl. Season with salt and pepper. Reserve half the Buffalo sauce for serving. Brush tenderloins with remaining sauce.
  4. Turn heat down to medium. Grill tenderloins on all sides for 12–15 minutes or until a thermometer inserted in the centre of the meat reads 60 °C (140 °F) for medium rare. Brush with Buffalo sauce while cooking. Set tenderloins aside on a plate and let rest for 10 minutes.
  5. Meanwhile, blend blue cheese, sour cream, mayonnaise, lemon juice, hot sauce and garlic powder in a food processor until smooth. Transfer to a bowl and add herbs. Season with salt and pepper.
  6. Cut pork tenderloins into slices or strips and coat with reserved Buffalo sauce. Serve pork tenderloin with blue cheese dip and raw veggies and fruit (carrots, celery, radishes, tomatoes, peppers of various colours, apples, pears, etc.), if desired.

In The Oven

  1. Follow steps 1 through 3 above.
  2. In a large oven-safe skillet set over medium-high heat, heat 15 mL (1 tbsp.) oil, then brown pork tenderloins for 3 minutes on each side. Continue cooking in the oven at 190 °C (375 °F) for about 12–15 minutes or until a thermometer inserted in the centre of a tenderloin reads 60 °C (140 °F) for medium rare. Brush with more Buffalo sauce while cooking. Set aside on a plate and let rest for 10 minutes.
  3. Follow steps 5 and 6 above.
