Pork Cassoulet

Preparation

Slow cooker

  1. In a large bowl, soak beans in water for 8 hours or overnight.
  2. Drain and rinse beans, then place in the slow cooker. Add remaining ingredients, except for sausages, and mix well. Generously season with salt and pepper, then add the sausages over top.
  3. Cover and cook on low for 8 to 10 hours or until beans are cooked. Stir once halfway through cooking.
  4. Remove sausages from the slow cooker and cut into pieces. Return sausages to the slow cooker and stir gently. Season to taste and serve.

In The Oven

  1. Place oven rack in the middle position and preheat oven to 150 °C (300 °F).
  2. Place all ingredients in a casserole dish, except the sausages, and mix well. Generously season with salt and pepper, then add the sausages over top.
  3. Cover and bake for 4 to 5 hours. Add broth as needed. Stir once halfway through cooking.
  4. Remove sausages from the casserole dish and cut into pieces. Return sausages to the casserole dish and stir gently. Season to taste and serve.
