Pork Alfredo

On the stove

  1. In a large skillet set over high heat, melt 30 mL (2 tbsp.) of butter and brown half the meat at a time without cooking completely. Season with salt and pepper. Set aside on a plate.
  2. In the same skillet set over medium heat, soften onion in remaining butter. Add cream and Parmesan and bring to a boil while stirring until cheese melts. Add pork and simmer gently for about 5 minutes or until meat is cooked through.
  3. Stir in parsley and season to taste. Add a little water as needed if sauce seems too thick. Serve over fettucine or egg tagliatelle. Sprinkle with parsley and Parmesan.

Side

  1. Serve with broccoli, rapini or other green vegetable.
