Pork Fajitas with Apples and Shrimp
On the stove
- Heat the oil in a large pan over high heat. Cook the pork strips, stirring very little, for about 5 minutes. Season with salt and pepper. Set aside on a plate.
- In the same pan over high heat, sauté the peppers and onions or 5–8 minutes. Season with salt and pepper. Return the pork to the pan and add the apple sauce, paprika, and Tabasco. Continue cooking for 2 minutes, stirring frequently. Season to taste. Keep warm.
- On a work surface, spread the sour cream on the tortillas. Garnish with the pork mixture, shrimp, apples, and scallions. Roll the tortillas to complete the fajitas.
