Spanish-Style Pork Leg Stew

On the stove

  1. In a large skillet over medium-high heat, heat butter. Brown meat and chorizo for 2 to 3 minutes. Season with salt and pepper. Set aside in a bowl.
  2. In the same skillet, brown onion, bell peppers and garlic, stirring constantly. Add thyme and spices. Continue cooking for 1 minute.
  3. Deglaze with wine. Add remaining ingredients. Return meat and chorizo to skillet and bring to a boil. Season with salt and pepper. Cover and simmer very gently for about 2 hours or until the meat is tender. If necessary, reduce uncovered to thicken sauce. Season to taste.
